The greatest advantage of ceramic as a material is probably its property of not reacting chemically with food, which could lead to changes in taste. This means that no odours can remain on the blade and cleaning is much easier. Ceramic blades are significantly harder and sharper than almost all types of steel currently used for blades. They need to be resharpened much less frequently. However, the material is quite brittle, so the blade should always be protected from impact. It is also not suitable for rough, chopping work. The material is, of course, rust-free!
Care instructions: Ceramic blades are best cleaned by hand. Simply wipe with a damp cloth. A diamond grinder is required for sharpening. Please do not be alarmed if white ceramic blades turn yellowish over time. This is a normal sign of ageing and does not affect their function.
